This recipe was taken from Marianne Wren but I wanted to share because I LOVE it: Stuffed Portobello Mushroom Salad. This is a great option for dinner because it's low in calories, salt, and fat.
Ingredients:
6 portobello mushrooms (rinsed and stems removed)
2 tbsp. olive oil
3 oz. low-fat goat cheese
2 tbsp. chopped fresh basil leaves
6 cups baby arugula
1 cup red grape tomatoes
1 cup yellow cherry tomatoes
2 tsp. sugar-free honey
juice from 1/2 lemon
Nutritional facts: 1 mushroom, 1 cup greens, 1/3 cup tomatoes, 2 1/2 tsp. dressing = 131 calories, 8g fat, 84 mg of sodium, and 9g of sugar)
Directions: Preheat your grill to high and lightly brush mushrooms with 1 tsp. oil. Add cheese and basil in a small bowl. Spoon 1/2 oz. of cheese mixture onto each mushroom cap. Grill for about 4 minutes. Combine arugula and tomatoes. Whisk 2 tbsp. oil, honey, and lemon in separate bowl. Divide amongst 6 plates. ENJOY!
